Lately I've rarely eaten green salads. But as soon as it gets warmer outside, my desire for crisp, healthy greens will increase as well. Well right now, after this amazing weekend and this beautiful Tuesday!

I ate the quinoa salad with pomegranate, arugula, lamb's lettuce and walnuts for the first time two years ago because my colleague had a lunch for all of us , I had to make a note of the recipe right away, because the salad is not only correct, really delicious, but also a real vitamin bomb.

In search of new salad recipes, I recently found the recipe between all my cookbooks and cooking magazines reminded me directly of the great taste. So, on the weekend due to the spring weather, we finally got the wonderful quinoa salad with pomegranate and walnuts.


Even if I find it quite annoying to solve the pomaceous fruits from pomegranates, the time is definitely worth it. Pomegranates taste so wonderfully exotic that I even like a red-spattered kitchen.

If you roll the pomegranate over the work surface a few times before coring, the small fruits are much easier to remove.Drain and allow to cool.

  • Coarsely chop walnut kernels.
  • Wash the arugula and lamb's lettuce and place in a bowl. Remove the pomegranate seeds and sprinkle with the quinoa over the salad.
  • The dressing over the salad and fold in the walnut kernels.
