Vegetarian cauliflower curry with mangetouts
I really like the mildness of the yellow curry paste. That's why there's a delicious yellow cauliflower curry today that does not require any meat and so tastes great with crunchy vegetables and spicy coriander.

Oil in Heat a wok and sauté the yellow curry paste. Slice the spring onions and sauté briefly. Stir in the coconut milk and strain Bring to a boil, then cook over medium heat for 5 minutes. If the curry is too thick for you, just add some water.
Finally Add the cauliflower and mangetout to the curry and serve with cilantro and the cashews.
