Zucchini tower with carrots, sun-dried tomatoes and avocado
Does not he look pretty, the zucchini tower? I really wanted to use the ingredients to prepare a stink-normal vegetable pan. But then I came up with the idea of just stacking the ingredients.
Tastes great with grilled meats or as a side dish to mixed salad. Surely also a great idea for the next party buffet.

- Peel the carrots and cut into small cubes. Heat the water in a pot and cook the carrots softly (about 5 minutes). Then drain and put in a bowl.
Cut the dried tomatoes into small pieces, core the avocado and dice.Heat the oil in a pan and sauté the zucchini slices on both sides for about 4 minutes. Remove and allow to cool, possibly salt and pepper. For the turrets the carrots -Avocado mass between 2 zucchini slices fill.
The leftovers you can also wonderful with a Serve pasta or rice, or as a low carb variant with a piece of turkey.
