Do you also dream about your next holiday and you want an exotic meal? Then I have a delicious mango curry for you here.

The red curry paste provides a pleasant spiciness. It tastes perfect in combination with the fruity mango, the creamy coconut milk and the crunchy mangetout.

The mango curry is made really fast and you conjure up some sunshine in a flash.

I'm really happy about the win!Cut the chicken into thin strips, add to the wok and fry. Stir in the red curry paste.

  • Dice the mangoes and cut the spring onions into strips. Then add the lemongrass and cane sugar to the chicken. Stir in the coconut milk and broth, allow to boil briefly, then simmer over medium heat for about 20 minutes. Occasionally stir.
  • Five minutes before the end of cooking, add the blanched mangetout and cashew nuts .
  • Enjoy it!
