I love colorful, healthy salads, like the low carb hack salad, which consists of peppers, tomatoes, cucumbers and onions. The ingredients are finely chopped to better absorb the flavors of the herbs and spices.
Low carb hack salad
For the salad, also called Israeli salad, I've combined my favorite ingredients, which I actually always in the house. Not only does it taste totally refreshing, it also looks sooooo colorful, like summer in the bowl. Just let your imagination run wild and mix in other ingredients like corn, kidney beans, avocado or feta cheese. The salad goes well with grilled chicken breast, falafel or rice.
You can also prepare the colorful salad the night before and put it in the fridge overnight.
