Fancy a tasty snack? The eggplant rolls are made in a flash and taste great! Perfect as a hearty finger food for a rich Easter brunch or for your party buffet.

I found the recipe in the cookbook low carb on the go.Let it rest for 10 minutes. Then brush the aubergine slices from both sides with olive oil and grill in the oven for 10 minutes, turning in between. Then remove and allow to cool.

  • Mince walnuts and roast fat free in a pan
  • Chop the feta and mix with the cream cheese. Cut the chili pepper into thin rings, chop the thyme roughly. Mix both with the honey, lemon juice and walnuts with the feta-cream cheese mixture.
  • Spread the eggplant slices with the feta cream and roll it up as well as possible.
  • Bon appetit!
