Mozart Ball Muffins

These rich chocolate muffins take inspiration from Mozartkugeln, the Austrian confection traditionally associated with layers of marzipan, pistachio, nougat, and chocolate. Each muffin contains a soft marzipan-pistachio center beneath a chocolate topping.

Ingredients

For the filling

  • 100 g marzipan
  • 2 tablespoons finely ground pistachios
  • 1 teaspoon milk, if needed

For the muffins

  • 200 g all-purpose flour
  • 40 g unsweetened cocoa powder
  • 150 g granulated sugar
  • 2 teaspoons baking powder
  • Pinch of salt
  • 2 large eggs
  • 180 ml milk
  • 100 ml neutral vegetable oil
  • 1 teaspoon vanilla extract
  • 75 g chopped dark chocolate

For the topping

  • 100 g dark chocolate
  • 1 teaspoon neutral vegetable oil
  • Chopped pistachios or small pieces of marzipan

Method

  1. Heat the oven to 180°C or 350°F. Line a 12-cup muffin pan with paper cases.
  2. Knead the marzipan and ground pistachios together. If the mixture is crumbly, add just enough milk to bind it. Divide it into 12 small balls.
  3. In a large bowl, combine the flour, cocoa powder, sugar, baking powder, and salt.
  4. In another bowl, whisk the eggs, milk, oil, and vanilla. Pour the wet mixture into the dry ingredients and stir only until combined. Fold in the chopped chocolate.
  5. Place a spoonful of batter in each muffin case. Add one marzipan-pistachio ball, then cover it with more batter. Fill each case no more than three-quarters full.
  6. Bake for 18–22 minutes, or until the muffin tops spring back when lightly pressed. A tester inserted away from the filling should emerge with a few moist crumbs.
  7. Cool the muffins in the pan for 5 minutes, then transfer them to a rack.
  8. Melt the topping chocolate gently and mix in the oil. Spoon it over the cooled muffins and finish with chopped pistachios or marzipan.

Serving and storage

Serve the muffins at room temperature so the marzipan center remains soft. Store them in an airtight container for up to three days. They can also be frozen without the chocolate topping.

Useful variations

  • Hazelnut: Add a small amount of hazelnut spread around the marzipan center to echo the confection’s nougat layer.
  • Orange: Add finely grated orange zest to the batter for a brighter chocolate flavor.
  • Mini muffins: Form smaller filling pieces and begin checking for doneness after 10–12 minutes.
