Autumn is just beginning to shine in a colorful burst of color. Wherever you look, you see warm orange, yellow and red leaves slowly sailing from the trees. The deliciously sweet autumn fruit Kaki not only matches the autumnal mood, but also tastes great with my autumnal Soulfood! There are healthy sugar-free pancakes with baked Persimon® kaki. I'm not exaggerating when I say I've rarely eaten sooo delicious, healthy pancakes.
My recipe for pancakes without sugar
My sugar-free pancakes are quick and healthy soulfood on stormy autumn days. They're just perfect for a family breakfast on the weekend or a leisurely afternoon snack.
Instead of sugar, I sweetened my pancakes with maple syrup and added some cinnamon and vanilla to the dough. Not too sweet, wonderfully fluffy and thanks to the kaki in the dough a real eye-catcher! The fruit can be wonderfully baked with in the pancake dough, as it does not have to be peeled and has no pungent kernels.
The Persimon® Kaki
The Persimon® is a very special kaki variety and the Protected Designation of Origin guarantees maximum quality and a very special fruity-sweet taste.
While some kakis have a slightly bitter aftertaste , the bitter substances are removed from the Persimon® by a natural process. The fruit tastes a bit like mango and a bit like peach. Absolutely delicious!

My delicious sugar-free pancakes are healthy soulfood for cold autumn days.
Pancake half a teaspoon of coconut oil in a small pan on medium heat. Put a slice of persimmon in the pan and distribute 3 tablespoons of the dough over the fruit. Cook the pancake 1-2 minutes on each side.
Then bake the remaining pancakes alike.
Garnish and serve the pancakes with maple syrup.
