Pliny with berry quark
Today I have two delicious and totally simple recipes from the beautiful cookbook Soulfood: The Best Recipes for Body and Soul cooked for you.
In the cookbook from the LECKER editors (published by Edel Verlag) you will find figure-friendly wellness recipes with good and fresh ingredients. Healthy, delicious and healthy - That sounds like recipes that fit my taste as a part time low carbler.
Layout and Design
Already as I leaf through, I thoughtfully created the first postcooking lists. This is not only due to the deliciously sounding recipes and appealing food photos that are always placed next to the recipes on the right side, but also to the loving design that runs like a red thread through the whole book. All around modern and attractive!
The recipes in the book are very clear and contain a lot of useful information such as the exact preparation time, the degree of difficulty, the caloric value and the costs for the purchase of food
Recipes
The book contains the 60 most popular Soulfood recipes which true readers may have encountered in LECKER magazines or the LECKER website.
The Soulfood recipes in the cookbook are divided into the chapters Low Carb , Vegetarian , Soups , Rank & Slim , Power Drinks and Sweets for the Soul .
Since I like to eat a lot of protein, especially in the evening, Low Carb is one of my favorite chapters in the book. From the hack-lime-pan to the chicken-zucchini-fritata you will find many modern and varied low carb ideas. The delicious recipes from the chapter Vegetarian make you crave crisp, seasonal vegetables. Also noodles, potatoes and Co. are not too short :) In the chapter soups you will find in addition to classics such as the pea soup many refined recipe ideas for happy-spoonfuls. With a few calories, the recipes in chapter Rank & Slim come along.Refreshing drinks, which are particularly suitable for warm summer months, can be found in the chapter Power Drinks .
The culmination for all sweet-toothed makes the chapter sweets for the soul , from which my first recipe comes from.
Quark Pliny with Berry Quark
You need for 6 people:
- 50 g of soft butter
- 2 tablespoons of sugar
- grated peel of 1/2 organic lemon
- 2 eggs (size M)
- 1 kg thin quark
- 150 g flour
- 500 g berries (eg blueberries and Him berries)
Powdered sugar for dusting
Mix butter, 2 tablespoons of sugar, lemon zest and eggs with the whisk of the hand mixer. Add 500 g quark and flour to it.
Read the berries, if necessary wash and drain.
Heat the lard in a non-stick frying pan. Add the dough in portions as a blob, press a little flatter and bake for about 3 minutes per side. Warm up the ready-to-eat jellies.
Puree 500 g quark with 2/3 of the berries. Fold in the rest of the berries.
Serve with quark and sprinkle with powdered sugar.
The quark plums really did taste good to me - wonderfully light and fruity.
In addition to the delicious Quark-Plinsen, I've prepared a Mexican Christmas soup for you.
Mango and carrot soup
Ingredients for 4 people
- 1 chilli pepper
- 1 piece (20 g) ginger
- 500 g carrots
- 1 tablespoon oil
- 3 ripe mangoes (à ca. 400 g)
- 3 teaspoons vegetable broth
- 200 g whipped cream
- 1 small bunch/Potty Coriander
- Salt, pepper, cinnamon, nutmeg
- 1 teaspoon lemon juice
Slice the chili pepper lengthwise, core it and wash it. Peel ginger, finely dice. Peel, wash and dice carrots.
Heat 1 tbsp of oil in a large saucepan. Braise carrots, chilli and ginger in it. Peel 2 mangos, cut the pulp from the stone in rough pieces and add. Stir 3/4 l of water and broth, bring to a boil. Cover and simmer for about 10 minutes.
Remove chili and puree the soup with the hand blender. Add the cream and bring to a boil.
Wash the coriander and chop, except for garnish. Peel the remaining mango, cut the pulp from the stone and cut into cubes. Season the soup with salt, pepper, cinnamon, nutmeg and lemon juice. Add mango and chopped cilantro to the soup.I'm really thrilled with this lovingly designed cookbook and I'm sure I'll be able to cook some of the recipes.
