Stuffed mini peppers with ricotta, pesto and mozzarella
If you like peppers, you'll love these filled mini peppers! They are perfect as a party snack, as a small appetizer or just for a snack in between.
For me, there was the sweet mini peppers as low carb main course. And lo and behold - I am really fed up.

Portions : 1 Person
Ingred 5 Minipricks 6 EL Olive oil - salt 1 garlic clove Basil 2 EL Parmesan approx.Pluck the mozzarella into small pieces, grate the parmesan. Wash the arugula and place on a plate, sprinkle with 1 tablespoon of Parmesan cheese.
Olive oil Put salt, pepper, garlic, basil, cashews and the remaining parmesan in a tall container and puree. (As a pesto this would be too liquid, but perfect for the pepper filling.)
Put the pesto in a bowl and mix with the ricotta and mozzarella pieces, season with salt and pepper.
Fill the mass into the miniprikas.
Let it taste good !
