Lentil Salad with Arugula and Fried Cheese

About the Salad

This substantial salad combines earthy lentils, peppery arugula, and warm fried cheese. The contrast between tender lentils, fresh greens, and a crisp cheese crust makes it suitable as either a light main course or a generous side dish.

Suggested Ingredients

  • Cooked green or brown lentils
  • Fresh arugula
  • A firm cheese suitable for frying, such as halloumi
  • Olive oil
  • Fresh lemon juice or wine vinegar
  • Salt and freshly ground black pepper
  • Optional fresh herbs, sliced onion, or chopped tomatoes

Preparation

  1. Cook the lentils until tender but still intact, then drain them thoroughly.
  2. Whisk olive oil with lemon juice or vinegar, salt, and pepper. Toss the warm lentils with enough dressing to season them evenly.
  3. Slice the cheese and fry it in a lightly oiled skillet until golden on both sides.
  4. Fold the arugula into the dressed lentils shortly before serving.
  5. Arrange the fried cheese over the salad and serve while the cheese is warm.

Serving Notes

Dress the lentils while they are still slightly warm so they absorb more flavor. Add the arugula near serving time to preserve its texture, and fry the cheese last so its exterior remains crisp.
